For that kind of work, I would go for the middle-tier i3, the Pentium may be too little (especially if you do more, later) and the Xeon is overkill.
I have the Xeon E3-1220v2 and it is idling all the time.
Idle power should be comparable, a little better on the i3.
If you need VT-D then it’s only the Xeon.
